A great cookie recipe that is great for breakfast on the run or as a little treat for kids
Almond Cookies are very easy to make, this recipe uses crushed cornflakes and is a fun recipe for kids, it is easy to follow and tastes great! The cornflakes give the Almond Cookies extra crunch on the outside. You could also try using desiccated coconut mixed in with the crushed cornflakes, for some extra flavor and texture!
Serves 12 people.
Try sprinkling a little desiccated coconut on top of the cookie balls when they're cooked. Little hands will love helping with this!
Preheat the oven to 350 F / 180 C.
In a medium sized mixing bowl, beat together the butter and sugar until they are light and creamy.
Add in the egg and almond extract and mix well to combine.
Sieve the flour and baking powder together and gently fold into the butter and sugar mixture.
Crush the cornflakes into a bowl.
Use your hands to take small balls of the dough from the mixing bowl, roll gently to form a ball and then roll in the crushed cornflakes, until they are coated all over.
Place on a lined / greased baking sheet and bake in the oven for 20 - 22 minutes until golden.
Allow to cool completely on a wire tray.
