An easy Chicken casserole recipe that cooks gently in a crock pot or slow cooker, is great to know how to make, especially if you want to plan ahead and know that dinner is taken care of when you return home from being away all day! This recipe is one that kids will find very easy to make, almost everything is done in advance and the slow cooking process just makes everything that little bit more tasty and delicious!

To finish off, sprinkle generously with the chopped herbs & serve with boiled rice or creamy, mashed potatoes.

Ingredients Ingredients

  • Chicken breast fillets, skinned [4]
  • Sun-dried tomato paste / tomato puree [6 teaspoons]
  • Olive oil [2 tablespoons]
  • Onion, finely chopped [1]
  • Cloves garlic, crushed [2 cloves]
  • Red chili, seeded and finely sliced [1/2]
  • Chopped fresh thyme [1 tablespoon]
  • Italian Pancetta (streaky bacon) [3 oz / 75 g]
  • Can chopped tomatoes [14 oz / 400 g]
  • Can of butter beans, rinsed [14 oz / 400 g]
  • Fresh parsley and chives, chopped [1 tablespoon of each]
  • Salt & freshly ground black pepper
  • Squeeze of honey [(optional)]

Preparation & Cooking

  1. Mix together the thyme and the tomato paste and spread generously over each chicken breast.

  2. Season well with salt & pepper and set aside.

  3. Place all the remaining ingredients, except the parsley and chives, into the crock pot / slow cooker, and stir to mix together being careful not to break up the beans.

  4. Carefully place the chicken breast on top of the bean & tomato mixture.

  5. Cover and cook on low in the crock pot 4 - 5 hours, stirring occasionally if possible. Add in the squeeze of honey for the last half hour of cooking, it will a nice, sweet, stickiness to the dish.
