A serving of guacamole on the side goes really well with these fajitas.
To make the Chicken Fajitas, place the olive oil, garlic, Cajun spices and chili in a bowl and mix well together.
Slice the chicken fillets diagonally into 1" strips. Add to the bowl of marinade ingredients. Cover and leave to chill for a couple of hours, or overnight if possible.
Heat a pan until hot, remove the chicken from the marinade with a slotted spoon and cook for 3-4 minutes on each side until cooked through. Remove from the pan, and keep warm.
Add the peppers and onions to the pan, reduce the heat, and allow them to cook for 3 - 4 minutes.
Add the chicken back to the pan and mix in with the peppers and onions to heat through again.
To serve, spread a portion of the chicken & peppers onto the surface of each tortilla, put some creme fraiche on top, along with a handful of grated cheddar cheese, roll up, and tuck in!
