Great option for making vegetables really tasty for kids, these fajitas are easy to make and very tasty to eat

 

These Chicken Fajitas are so easy to make, and they’re a great way to get kids to eat peppers and onions.

Other options to try;

  • Substitute the chicken for beef strips, if preferred
  • Save any leftovers & reheat the next day
  • Make a great lunchbox option, as they are also delicious served cold
  • Add courgettes (zucchini), mushrooms and green peppers
  • Serve the chicken & pepper mix on bed of rice, instead of on a tortilla

 

 

Serve with Creme Fraiche and grated cheddar cheese

Ingredients Ingredients

  • Chicken breast fillets, skinless & boneless [4]
  • Red pepper, seeds removed, cut into strips [1]
  • Yellow pepper, seeds removed, cut into strips [1]
  • Yellow onion, peeled & sliced [1]
  • Fresh chili, de-seeded and finely chopped [1]
  • Cajun spice mix [2 tablespoons]
  • Olive oil [3 tablespoons]
  • Garlic cloves, crushed [2]
  • Flour tortillas, warmed [1 packet]
  • Sour cream / creme fraiche [For serving]
  • Grated Cheese [For serving]

Preparation & Cooking

  1. To make the Chicken Fajitas, place the olive oil, garlic, Cajun spices and chili in a bowl and mix well together.

  2. Slice the chicken fillets diagonally into 1" strips. Add to the bowl of marinade ingredients. Cover and leave to chill for a couple of hours, or overnight if possible.

  3. Heat a pan until hot, remove the chicken from the marinade with a slotted spoon and cook for 3-4 minutes on each side until cooked through. Remove from the pan, and keep warm.

  4. Add the peppers and onions to the pan, reduce the heat, and allow them to cook for 3 - 4 minutes.

  5. Add the chicken back to the pan and mix in with the peppers and onions to heat through again.

  6. To serve, spread a portion of the chicken & peppers onto the surface of each tortilla, put some creme fraiche on top, along with a handful of grated cheddar cheese, roll up, and tuck in!
