A no bake, chocolate cake - sets in the fridge, makes a great alternative to traditional baked cakes

For a quick and easy to make treat at the weekend, your kids will love making this Chocolate no bake fridge cake! They don’t even need to use the oven as it’s a fridge cake! It’s a really easy cake recipe for kids to make – the most difficult part is waiting for it to set!!

Additional options;

  • Add marshmallows to make this into a Rocky Road Cake
  • Add chopped hazelnuts & pecans if you like a nutty flavor
  • Add ginger-nut biscuits to give a more crunchy texture
  • Drizzle melted white chocolate over the top of the cake to make it more luxurious looking

You could also make these into Mini Chocolate Mud Pies by putting them in cupcake pans!


Ingredients Ingredients

  • Chocolate digestive biscuits, crumbled [8 oz / 250 g]
  • Butter [6 oz / 175 g]
  • Cocoa powder [1 tablespoon]
  • Maltesers [4 oz / 125 g]
  • Caster sugar (fine) [4 oz / 125 g]
  • Plain milk chocolate [8 oz / 250 g]
  • 8" spring form cake pan

Preparation & Cooking

  1. Using a large saucepan, melt the butter until it is soft but not changing color.

  2. Remove the saucepan from the heat and add the cocoa powder and sugar, mix well together.

  3. Next add the Maltesers and the crushed biscuits to the saucepan and give everything a great big stir!

  4. Line you cake pan with cling film (plastic wrap), allowing it to overhang the sides of the pan, so that it will be easy to remove the cake when it sets.

  5. Pour all of the mixture into the cake pan and use a wooden spoon to press it all down and compact it together.

  6. For the cake topping, melt the plain chocolate in a microwave or double broiler until it is soft and easily spreads out.

  7. Pour the melted chocolate all over the cake top and then place the cake in the fridge to set for 2 - 3 hours, or overnight if possible.

  8. Remove from the fridge when it is firm and then carefully release the spring form pan from the cake, place on a serving plate, cut into portions and enjoy!
