These Ginger Cookies are a great for kids and make an easy lunchbox treat. They are crunchy on the outside, and soft on the inside, just what you’d expect from a homemade cookie!

Try to store some for your lunchbox during the week!! They will stay fresh in an airtight jar for up to five days!


Ingredients Ingredients

  • Butter [4 oz / 125 g]
  • Golden syrup [1 tablespoon]
  • Granulated sugar [2 oz / 75 g]
  • Plain flour [6 oz / 175 g]
  • Bicarbonate of soda [half teaspoon]
  • Ground ginger [2 teaspoons]

Preparation & Cooking

  1. Preheat the oven to 350 F / 180 C.

  2. Using a small saucepan, melt the butter and golden syrup together.

  3. In a large mixing bowl, place all the other ingredients, then add in the melted butter and syrup mixture, stir well together.

  4. Use your hands to roll spoonfuls of the mixture into small balls, and place on a greased or lined baking sheet. Allow enough room between each Ginger Cookie for them to rise when baking without sticking together.

  5. Flatten the top of each cookie slightly with the back of a spoon.

  6. Bake in the over for 12 - 15 minutes until golden and then remove from the oven.

  7. Allow to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
