Who can resist Macaroons? They’re one of the easiest kids recipes to make. They’re also great for anyone who has a gluten intolerance as there is no flour used in making them. They are really easy to bake and make a perfect little snack to have when the kids come in from school.

Ingredients Ingredients

  • Caster sugar (fine sugar) [4 oz / 125 g]
  • Ground almonds [4 oz / 125 g]
  • Desiccated coconut [4 oz / 125 g]
  • Egg whites [2]
  • Almond extract / almond essence [few drops]

Preparation & Cooking

  1. Preheat the oven to 300 F / 150 C

  2. Prepare baking sheet / cookie sheet by greasing with butter or lining with parchment or baking paper.

  3. Whisk the egg whites until the form stiff peaks, using an electric hand-held mixer or stand mixer.

  4. Add a few drops of the almond extract to the egg whites.

  5. Sieve the caster sugar and gently fold it into the egg whites, being careful not to over-mix the mixture.

  6. Add the ground almond and the coconut to the mix and gently fold until all the ingredients are combined.

  7. Use a small size ice-cream scoop or two spoons to spoon walnut sized Macaroons onto the prepared baking sheets, allowing space between each one.

  8. Bake for 20 - 25 minutes until golden.

  9. Remove from oven and transfer to a wire rack to cool completely.
