Omelettes are a great standby for a quick and filling breakfast or lunch.
They are so simple to make and taste even better when you add lots of fillings to them, just like you would with a pizza.

Serves 2 People people.
For breakfast, this is perfect when served with warm, buttered toast.
Beat the eggs and a little milk together in a bowl.
Heat a frying pan until hot, but not smoking, add the butter and allow to melt.
Season with sea salt and pepper and pour the egg mixture onto the pan.
Swish the mixture around the pan until a fine layer sticks to the side of the pan, you can rotate the pan to do this.
Allow to cook and set, this takes a few minutes. While the eggs are cooking, make sure you have all your extra fillings ready and beside you.
Give the pan another swish so that the crispy thin edges start to come away from the pan.
Now you can add your fillings.
Place your fillings only on one half of the omelette, and fold the other half over on top of it.
Cook for a further minute or two to allow the fillings to heat through, especially if you have added cheese - this gives it time to melt.
Remove from pan and place on a warmed plate & serve immediately.
